The Connoisseur's New York

Ateliers by day, cellars by evening, and one dinner nobody else can reserve.

A short stay built around making things and tasting things — a pair of shoes started from a sketch, a cellar opened for an afternoon, a sushi counter built in a room for one night.

Mornings stay open. Every afternoon has a single anchor, and evenings move at the pace of the person at the table.

  1. Day 01

    Arrival, unhurried

    Morning

Met at the aircraft door at JFK, escorted through arrivals, luggage sent ahead to the suite.

    Afternoon

Settled at the hotel with the room set to the client's notes. Nothing scheduled.

    Evening

An easy dinner within walking distance, then a late set in a small room downtown.

Chauffeur on standby from wheels-down; suite pre-registered so there is no front desk.

  2. Day 02

    The atelier

    Morning

Breakfast in the neighbourhood; a walk through the West Village with someone who knows it.

    Afternoon

A private design session for a bespoke pair, from leather selection to first sketch.

    Evening

Dinner at a counter the client will want to talk about at home.

Car holds through the session; shipping of the finished pair arranged in advance.

  3. Day 03

    The cellar

    Morning

Free morning. A museum before opening is available if the client wants it.

    Afternoon

A private tasting led by people who import the bottles, with a few that rarely leave the cellar.

    Evening

The private counter: a sushi chef, a counter built for the evening, quiet music in the room.

Tasting timed to leave a rest before dinner; venue set while the client is out.

  4. Day 04

    Departure

    Morning

Slow breakfast, a final walk, a last errand handled by us.

    Afternoon

Transfer to the airport or Teterboro, timed to the flight rather than to traffic guesses.

Bags collected from the suite; departure lounge or FBO coordinated ahead.

Why it's KNOWN

Each anchor here begins with a relationship rather than a reservation system. We hold the sequence together so the client only notices the next good thing.
