The private counter

A sushi counter, built for one evening, in a room your client already loves.

Private dining

Rather than competing for eight seats at someone else's counter, KNOWN brings the counter to the client — a residence, a loft, a townhouse, a private room. A sushi chef and their team arrive with the fish, the rice, the ceramics and the knives, and the evening runs at the pace of the group.

The room is shaped around it: low light, the right music in the corner — a jazz duo, a guitarist, someone choosing records — and a sake or Champagne pairing that follows the menu rather than a list.

The same approach extends to a dinner party cooked by a celebrated New York chef — one whose résumé includes Monkey Bar — the menu written in conversation with the client, the chef at the table between courses, and an evening that cannot be reserved anywhere.

Why it's KNOWN

A great dinner can be booked. An evening like this has to be arranged — with the chef, the room and the people at the table in mind from the first conversation.

Why New York

Few cities have this depth of sushi craft and serious kitchen talent within a few blocks of each other — or so many extraordinary private rooms to bring it into.

Why KNOWN

Chefs of this calibre cook in their own rooms. When they step outside them for a night, it is because they trust who is asking and how the kitchen, the counter and the evening will be handled. That trust is the part we provide.

What it can include

  • 01A sushi counter set within a residence or private venue
  • 02A sushi chef and team, with fish sourced for the evening
  • 03Sake, wine or Champagne pairing
  • 04Live music or a selector, shaped to the room
  • 05Or: a dinner party cooked by a celebrated New York chef — previously of Monkey Bar —
  • 06Service staff, setup and a discreet close at the end of the night

Illustrative, not a package. Every element is confirmed against the date, the party and what the partner can honour.

Good to know

  • These are examples of what KNOWN may arrange, not a fixed format.
  • Chef participation depends on the date and the request; nothing is confirmed until it is in writing.
  • Venues need kitchen access and space for a counter — we assess the room in advance.
  • Dietary and cultural requirements are handled directly with the chef.
